Hey everyone! The cold weather came and went pretty quickly. We’re back to normal September weather here in Ohio. I guess it actually is really nice. We get to preview the cold weather before committing to it! This always helps me make the most of the last days of Summer. But, while the cold weather stops in, there are a few recipes I have to make!
Chili is the first Fall recipe I make every year! It is one of my husband’s favorites. He gets so excited when I say I am making Chili! But, in recent years I have gone vegetarian. This makes it a little difficult to cook for my protein addicted hubby while also cooking for myself! While we are both running all over, we have to come up with quick recipes that will satisfy us both and meet our health requirements!
So, the other day I was making him chilli and decided I would make myself some as well! And it turned out great!! It reminded me of the chilli I have made for years with an amazing twist! Plus, I used most of the ingredients I use in my husband’s chili, just taking out the meat and adding some extra ingredients to make up for it!
Because I used a lot of the same ingredients, I was able to make a pot of chilli for me and a separate pot for him all while adding virtually no extra time to the cooking process! Plus, these dishes will serve as our leftovers for lunches for the next few days. Anything that can save me time and taste delicious is a must in our house.
So, here is the recipe:
What you will need:
- One can of tomato sauce
- One can of tomato paste
- One can of hot chili beans
- One can of corn (or fresh corn if you like!)
- mild salsa
- Chili Powder
- Italian Seasoning
- Black Pepper
- Onion-optional. I opted out because I don’t like the texture.
So, I took the quinoa and cook it on the stove top. Add the tomato sauce, tomato paste, chili beans, corn, salsa, and seasonings to your crockpot. Cut enough broccoli for about 1/2 a cup. Then add this to the crockpot. Finally, once your quinoa is done, add it to your mixture. Stir until all is combined. Heat on medium until the entire contents are warm.
